RAW - CLEAN - WHOLE
I have this dish at least once a week. It is perfect to take to work for lunch or for a light dinner. WARNING! Once you try veg noodles you will NEVER go back!
Carrot & Courgette Noodles [ with Lemon & Basil Dressing ]
For the Noodles
1 handful of Kale
1/2 cup Flame Raisins
1/4 cup Walnuts
2 handfuls of basil leaves
1 garlic clove
Juice 1/2 a Lemon - ( or more for a zingy sauce)
1/8 cup cashews
4tbsp Olive oil ( or oil of choice )
Salt - to taste
To make veg noodles you will need a spiral slicer or grater. They are really cool and I use mine all the time. Alternatively you could use a toothed peeler, or a Mandolin with suitable attachment.
I make a batch of Pesto regularly, and only use a few teaspoons (if that) at a time on my noodles or other salads. It keeps well in the fridge for at least a few days if covered.
